From August 3 to October 24, Spring picked up a motorcycle-themed coffee shop on TC Jester, a coffee shop with a drive-thru on FM 2920, a roaster café on Rayford Road, a donut shop on Louetta that opens at 4:30 a.m., and a cold-pressed juice bar on Gentry Street. None of them sit next to each other. Each one opened on a road people already use. Taken together, they show that most of Spring's new independent businesses this fall serve the first half of the day.
That makes the new map easy to read. If you want to see what changed in Spring since summer, go before lunch.
Here is every new morning-oriented stop that opened this season, in the order it opened. Every one is a local or regional operator, not a national chain.
| Stop | Address | Opened | On the counter |
|---|---|---|---|
| Jovi Roasters Café | 602 Rayford Road, Ste. B | Aug. 3 | Coffee, alfajores, flan, empanadas, bagels |
| The Vitality Lounge | 419 Gentry St., Ste. 106 | Sept. 1 | Smoothies, cold-pressed juice |
| Donut Block & Cafe | 3403 Louetta Road | Mid-September | Donuts, kolaches, croissant sandwiches, coffee |
| Cold Start Coffee | 18113 TC Jester Blvd., Ste. A | Oct. 11 | Coffee, pastries, small bites |
| Honor Society Coffee Co. | 6820 FM 2920, Ste. 100 | Oct. 24 | Espresso, specialty drinks, teas, pastries |
Jovi Roasters Café, the first of the five, also shows something the others share. Owners John and Violet Irias stock their food case with empanadas, burritos and bagels made by other locally owned small businesses, according to Community Impact's report on the opening. So a cup of coffee on Rayford Road also buys from a few other small businesses.
The two biggest October openings were each supposed to come sooner. Cold Start Coffee had planned to open in the summer, and Honor Society Coffee Co. had been slated for August. Both slipped into fall and opened 13 days apart, Cold Start on October 11 and Honor Society on October 24.
They are built for different mornings. Cold Start, owned by Stephanie Lopez, Oscar Lopez and Marshall Doreen, is a motorcycle-themed café on TC Jester Boulevard. It welcomes pets and plans to add beer and wine once it gets a license. Stephanie Lopez told Community Impact who the shop is meant for:
"Whether you ride a motorcycle, drive a sports car, bring your family, meet a friend, stop in on your way to work or simply want a good cup of coffee, you are welcome here."
Honor Society works more like a commuter stop. Its FM 2920 shop has a drive-thru along with indoor service, and it sells frappes, teas, pastries and merchandise. The Spring-Klein location is locally owned by John and Joni Shaw. The brand started in 2020 with founder Billy Schiel, already has locations in Tomball, and still books its coffee cart for private events, according to Community Impact. A business that began as a catering cart now has a permanent counter on one of Spring's main east-west roads.
Louetta Road is the one corridor where the morning openings arrived alongside full-menu restaurants.
Donut Block & Cafe opened at 3403 Louetta in mid-September. It runs seven days a week from 4:30 a.m. to 1 p.m., so it closes before most of Spring's lunch rush begins. The menu fits a pre-commute stop: donuts, kolaches, croissant sandwiches and coffee.
On the same road, Hashtag India opened September 10 at 1614 Louetta Road, Ste. A, serving mandis, biryanis and Indo-Chinese dishes. It also serves breakfast and desserts and offers delivery, pickup and catering. Casa Nueva Mexican Grill and Bar soft-opened at 8921 Louetta Road on September 16, with a menu running from fajita and nacho plates to enchiladas and seafood. Tanah Rose, a clothing boutique that had sold online, opened its first physical store at 9312 Louetta in September. Owner Tina Smith told Community Impact the store is for people who prefer shopping in person.
That puts a 4:30 a.m. donut counter, a boutique, an Indian kitchen that serves breakfast and a Mexican grill on one road, all opened within a few weeks of each other in September.
The historic district follows the same daytime pattern, and its new businesses are clustered at one address.
The Vitality Lounge opened September 1 at 419 Gentry St., Ste. 106. Owner Joshua Belland built the menu around smoothies and cold-pressed juices, each aimed at a different wellness goal. In the same building, Buren Bakery is expanding into Ste. 204. Owner Alexandra Astacio told Community Impact the new space stays in the shopping center where the bakery started, with a larger indoor dining room and new menu items. Buren opened in June 2024 to celebrate Puerto Rican heritage. Its counter carries pan sobao, quesitos and powdered-sugar mallorcas, per Community Impact's coverage of the expansion.
A few blocks over, German Gift House added a second shop, German Gift House II, at 318 Main St. on September 11. Owner Ursula Sledge has run the original store in Old Town Spring for more than 10 years. The new shop carries German gifts, food, collectibles, jewelry and linens. Two of the district's established businesses chose to grow in place this year rather than move.
Old Town Spring's holiday calendar gives the district a reason to come back each weekend this season. Visit Houston lists Home for the Holidays as the district's 46th annual celebration, running November 14 to December 24 with weekend entertainment, family activities and photos with Santa. The season kicks off with the tree lighting on November 14.
For 2026, Old Town Spring has organized the season around six themed Saturdays, published in its Hometown Holidays 2026 packet:
| Saturday | Event |
|---|---|
| Nov. 14 | Grand Christmas Tree Lighting |
| Nov. 21 | Charity Give Back Weekend |
| Nov. 28 | Small Business Saturday |
| Dec. 5 | Christmas Movie Night |
| Dec. 12 | Christmas Drone Show |
| Dec. 19 | Christmas Extravaganza |
The tree lighting is listed at 403 Main St., with the tree lit at dusk. That's a short walk from German Gift House II at 318 Main and the Gentry Street building where the Vitality Lounge and Buren Bakery sit. On any of the six Saturdays, you can pair a stop at one of the district's newer counters with that week's event.
Elsewhere in Spring, Ember & Vine has taken the former Butler House at 23931 Gosling Road for a restaurant and indoor cigar lounge. It pairs a chef-driven dining room and patio with cocktails and a wine list, and it announced an October 28 grand opening.
The openings already announced for the rest of November follow the same pattern:
If Cinnaslab opens on its target date, Spring gets its next cinnamon-roll-and-coffee counter on Black Friday, one day before Small Business Saturday in Old Town Spring.
